Date Almond Coconut Balls

The Mountains called, and we answered! My friend Jenny introduced me to this vegan protein/energy snack. We hiked Ira Spring Falls trail yesterday on Bandera Mountain in North Bend, Washington and it was one of those days that you could see mountain for miles. We brought this snack with us along others.

Recipe:

  • 200g dates, pitted (buy the best ones you can afford, like Medjool – the plumper, the better!)
  • 70g ground almonds
  • 30g desiccated coconut
  • Sprinkle of cinnamon
Add cocoa, PB, hemp or chia if you want. Process in Vitamix, Food Processor, or high powered blender. Roll into balls and store in the refrigerator.
