Zoodled Zucchini with Mango Sauce
My favorite lunch is zoodles with mango sauce. What I mean by zoodle is raw zucchini noodle. You would never think that raw zucchini would be so appetizing, but it is. It tastes buttery, creamy, crisp and fresh all at the same time. It is by far my favorite salad. If you use a vegetable spiralizer to make 8 or so zucchini at the beginning of the week and do not contaminate with any other items, it will last up to 3 or 4 days tasting just as good. What makes this dish so special is the sauce… It is blended mango, avocado, ginger and fresh basil. YUM!
Recipe: (1 serving)
- 2 zucchini – with the veggie spiralizer
- 1 cup mango
- 1/2 avocado
- 8 leaves of fresh basil
- grate in some fresh ginger (depending on how spicy you like it)
- 1/4 cup water
Put the mango, avocado, basil, ginger, and water in the Vitamix or high powered blender. I like to make up the sauce fresh each morning to go with my zoodles for lunch. I put the sauce in a separate container than the zoodles and mix together right before I eat.
