Breadfruit Pancakes

Breadfruit Pancakes, vegan version. This recipe is from the Jungle Project website, recommended by Jean:

Dry ingredients:

1 cup Jungle Breadfruit flour

3 tsp raw sugar (or alternative)

1 + 1/4 tsp baking powder

1/2 tsp powdered cinnamon

1/4 tsp sea salt

1/2 tsp chia seeds (optional)

Wet ingredients:

1 cup plant-based milk

2 tbsp chickpea flour

2 tbsp butter or coconut oil

1/3 cup water (more or less, depending on environmental moisture)

Recipe steps:

1. Combine all dry ingredients in a bowl

2. Incorporate one by one the wet ingredients, except for the water.

3. Mix toether and then start adding the water until getting a thick but soft mixture

4. Let rest for 3 minutes, you will see the mixture will thicken up and result in a denser texture than wheat pancake mix.

5. On medium heat, grease a nonstick pan and place a spoonful of batter, stretching if necessary with the base of the spoon.

6. Cook for 3 to 5 minutes until the surface starts to bubble, then flip the pancake and cook for another 2 minutes.

7. Serve with your favorite fruits and maple syrup or honey. Enjoy!
